Monday Nights Are For Homemade Ricotta and Sauce
I don't make the rules but if I did, this would definitely be one. What better way to spend your Monday night?
Happy Monday! I checked out a new farmer’s market last week amid the 95+ degree weather and found a abundance of raspberries, which is always thrilling. So baby pavlovas with raspberry jam were in order, duh. I’ve been wanting to make pavlovas for the longest time but tbh did not have it in me until I got my stand mixer. Pics and things to come!
I was ambitious last Monday and made ricotta gnocchi with sauce (recipes below). It was truly the best way to spend a Monday night. Who knows what tonight has in store.

Ricotta Gnocchi with Tomato Sauce
Sauce — Melt 1/4 cup of butter in a dutch oven. Add in ~4 cloves of finely sliced garlic. Cook until fragrant and softened, 2-3 minutes. Add in 1 28oz can of San Marzano tomatoes, 1/4 cup of water, and a handful of fresh basil leaves. Simmer until the tomatoes break down and can be easily mashed.
Gnocchi — Bring a big pot of water to a boil. Combine 15 oz of ricotta with 3 egg yolks. Once combined, mix in 1 cup AP flour, 3/4 cup grated pecorino, 3/4 tsp salt, and 1/4 tsp pepper. Mix until a shaggy dough is formed. Turn out onto a floured surface and shape into a ball. Divide the ball into fourths and roll out each section into a long log. Slide the dough into 1/2” pieces. Boil for 3-4 minutes or until they float to the top. Toss with sauce and top with pecorino. [video]
Tomato Limeade Mocktail
Combine a 1:1 ratio of cherry tomatoes and sugar + 2% of salt in a jar. Leave it sealed on your counter overnight to allow it to macerate. Strain and combine 2 oz of syrup with 2 oz of lime juice. Top with soda water or seltzer and enjoy. [video]
