Cherry Mint Sorbet


Ingredients
1 lb fresh cherries, pitted
¾ cup sugar
¾ cup water
Zest of 1 orange
½ cup fresh mint leaves, lightly packed
Instructions
Add the pitted cherries to a blender and blend until completely smooth.
Pour the puree through a fine mesh strainer into a bowl, pressing to extract as much liquid as possible. Discard the solids.
In a small saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves completely.
Remove from heat and stir in the orange zest and mint leaves. Let steep while the syrup cools to room temperature, about 20–30 minutes.
Remove the mint leaves from the syrup and discard.
Stir the infused syrup into the cherry puree until well combined.
Cover and refrigerate the mixture for at least 3 hours, or until fully chilled.
Churn the sorbet in an ice cream maker according to the manufacturer’s instructions, about 20 minutes.
Transfer to a freezer-safe container and freeze overnight until firm.
