Fridge Clean Out Pesto
This anything-goes herb pesto is your delicious solution to using up every last leafy green in the fridge.

Ingredients
2 cups loosely packed mixed herbs and/or greens
(any combo of parsley, cilantro, basil, mint, dill, chives, spinach, arugula, beet greens, carrot tops, etc.)¼ cup nuts or seeds
(pine nuts, almonds, walnuts, pistachios, sunflower seeds, pepitas – whatever you've got)1–2 garlic cloves (or a small shallot for a milder flavor)
½ cup olive oil (plus more as needed)
¼ cup grated Parmesan, pecorino, or nutritional yeast (optional)
Zest + juice of ½ lemon (or a splash of vinegar for tang)
Salt + pepper, to taste
Optional Add-ins:
A pinch of red pepper flakes
A spoonful of miso, tahini, or yogurt for creaminess
A touch of honey or maple syrup to balance bitterness
Instructions
Roughly chop your herbs/greens and add them to a food processor or blender.
Add garlic, nuts/seeds, lemon zest + juice, and cheese (if using).
Pulse a few times to break things down, then stream in the olive oil while blending until it’s your desired texture—smooth or a little rustic.
Taste and season with salt, pepper, and any optional add-ins.
Store in a sealed jar in the fridge for up to a week, or freeze in cubes for longer storage.
