Lupini Bean Tapenade
A bright, briny twist on classic tapenade thanks to the tangy punch of pickled lupini beans.
Lupini Bean Tapenade


Ingredients
1 cup Brami Pickled Lupini Beans, drained and rinsed
1/2 cup pitted green olives (like Castelvetrano), roughly chopped
1/4 cup pitted Kalamata olives, roughly chopped
2 tablespoons capers, drained
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1/4 cup extra virgin olive oil, plus more if needed
1/2 teaspoon crushed red pepper flakes (optional)
Freshly ground black pepper, to taste
Instructions
Food Processor:
In a food processor, combine the lupini beans, green olives, Kalamata olives, capers, and garlic. Pulse a few times until roughly chopped.
Add the parsley, lemon juice, and red wine vinegar. Pulse again to combine.
With the motor running, slowly stream in the olive oil until the tapenade reaches your desired consistency — chunky but spreadable. You can add a little more oil if you like it smoother.
Taste and season with black pepper (the olives and capers should provide enough salt, but adjust if needed). Add crushed red pepper if you like a little heat.
Transfer to a bowl and let sit for 10–15 minutes before serving to allow the flavors to meld.
Hand Chopped:
Finely chop the lupini beans, green olives, Kalamata olives, and capers until the mixture is coarse but uniform.
Transfer everything to a bowl and stir in the minced garlic and chopped parsley.
Add the lemon juice, red wine vinegar, and olive oil. Stir until well combined.
Season with black pepper and red pepper flakes (if using). Let sit for 10–15 minutes before serving so the flavors meld.
Serving suggestions:
Spread on crostini or toasted bread
Serve alongside crudités
Spoon over grilled chicken or fish
Toss with warm pasta for a quick sauce
