Happy Tuesday! It’s been a long past few days hasn’t it? I don’t have too much to say or share right now other than if you’re feeling sad/disappointed/angry, I’m right there with you. You can listen to more of my thoughts here if you’re interested.
The sun setting at 5pm is really getting to me - I love the cozy vibes but now before I start dinner my apartment is pitch black. I am trying to romanticize winter but I have a feeling that once it’s actually cold outside (it’s still 60 degrees in Columbus), the seasonal depression will set in. Speaking of - how are we working through that this year? If one thing is for certain, I’m not letting myself fall into that trap again. Maybe it’s time for one of those happiness lights lol.
I can’t believe Thanksgiving in basically 2 weeks away and I certainly don’t have my menu planned. The rush of holiday recipes is so overwhelming to me every year. My plan is to roast a whole chicken for the first time because what better day to take a risk than the one where everyone is depending on you for a meal. Just kidding, kinda.

As an investment banker, she found herself juggling work, life, and the constant struggle of trying to make better food choices—while still enjoying the pleasures of the meals we love. It was at her bank, when she would work late and order takeout to the office, that she realized how difficult it was to incorporate more vegetables into my daily routine. After some NYC studio prototyping, Edggies veggies were born!

Recipes
Peanut Butter Dark Chocolate Cookies [video]
Ingredients
1 cup peanut butter
1 sugar
1 tsp salt
1 egg
Chunks of dark chocolate
Directions
Preheat the oven to 350.
Thoroughly mix together peanut butter, sugar, salt, and egg.
Using a cookie dough scoop, scoop the dough into your hand and roll into a ball. Place on a baking sheet.
Press a chunk of dark chocolate into the top of the cookies, slightly flattening it.
Bake for 10 minutes. Sprinkle with flaky salt as soon as it comes out of the oven. Allow to cool for 5 minutes before enjoying!
I also just made Red Currant Bakery’s Marble Pumpkin Bread to soothe my post-election sadness and it is incredible!!
