Miso Garlic Marinara Potato Salad

Ingredients:
1.5 pounds tiny red potatoes
1 cup SAUZ Miso Garlic Marinara Sauce
2 tablespoons extra virgin olive oil
1 small yellow onion, finely chopped
2 celery stalks, finely chopped
1/4 cup fresh parsley, chopped
2 tablespoons soy sauce
1 teaspoon sesame oil
1/4 cup green onions, thinly sliced
2 tablespoons toasted sesame seeds
Salt and freshly ground black pepper to taste
Optional: 1/4 cup toasted pine nuts or crushed roasted cashews for added texture
Instructions:
Wash the red potatoes thoroughly and place them in a large pot. Cover with cold water and add a pinch of salt.
Bring to a boil, then reduce to a simmer. Cook until fork-tender (about 15-20 minutes). Drain and let cool slightly.
In a mixing bowl, whisk together Sauz’s Miso Garlic Marinara Sauce, olive oil, soy sauce, and sesame oil.
Cut the potatoes into halves or quarters, depending on their size.
In a large bowl, toss the potatoes with the yellow onion, celery, parsley, green onions, and toasted sesame seeds.
Pour the dressing over the potato mixture and gently toss until well coated.
Season with salt and freshly ground black pepper to taste.
For extra crunch, sprinkle with toasted pine nuts or crushed roasted cashews before serving.
Serve warm, at room temperature, or chilled. Pairs well with grilled seafood, roasted chicken, or a fresh green salad.
