Orange Chili Crisp Wings with Celery Slaw

Ingredients
For the Wings:
2 lbs chicken wings, split into flats and drumettes
1 tbsp baking powder
1 tsp salt (divided)
1/2 tsp black pepper
1/2 tsp garlic powder
For the Orange Chili Crisp Glaze:
1/2 cup fresh orange juice (about 1 large orange)
2 tbsp orange zest
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp grated ginger
1 clove garlic, minced
3 tbsp chili crisp
For the Vinegar-Based Celery Slaw:
4 stalks celery, thinly sliced on a bias
1 cup shredded cabbage (green or Napa)
1 shallot, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup rice vinegar
1 tbsp sesame oil
1 tbsp sesame seeds
1 tsp honey
1/2 tsp salt
1/4 tsp black pepper
Instructions
Pat the wings dry with paper towels, then season lightly with half of the salt.
Place the wings on a wire rack set over a baking sheet and refrigerate uncovered for at least 2 hours (or up to overnight) to help dry out the skin.
Preheat the oven to 425°F (220°C).
Remove wings from the fridge and pat them dry again. Toss with baking powder, remaining salt, black pepper, and garlic powder to coat evenly.
Arrange wings in a single layer on the wire rack and bake for 45-50 minutes, flipping halfway, until crispy and golden brown.
In a small saucepan over medium heat, combine orange juice, orange zest, honey, soy sauce, rice vinegar, ginger, and garlic.
Simmer for 5-7 minutes until slightly thickened. Remove from heat.
In a large bowl, whisk together rice vinegar, sesame oil, honey, salt, and black pepper.
Add sliced celery, cabbage, shallot, parsley, and sesame seeds. Toss to coat. Let sit for at least 10 minutes to allow flavors to meld.
Once wings are done, toss them in the orange glaze until evenly coated. Top with chili crisp
Serve immediately with the celery slaw on the side.
